Two big things determine how much your Spanish getaway is gonna costa (geddit?) The first is where. The Costa Blanca is often the cheapest part of Spain, Benidorm especially, because it has lots of hotels and it's proudly a cheap and cheerful destination. The Costa del Sol and the Costa Dorada usually give it a run for it's money. The Balearics cost more, and the Canaries cost more in winter and less in summer, which is the opposite of everywhere else.

The second is board. If you're gonna spend a decent amount of time at the hotel, then all-inclusive is usually the cheapest way to holiday, because the drinks are the bit that gets you. Sure, a caña is just €2 to €3 but four of them a day adds up (let alone the wine and spirits).

The secret third thing is tourist tax. There's no regional tourist tax on the Costa Blanca, the Costa del Sol, the Costa de la Luz or in the Canaries (apart from Mogan on Gran Canaria which adds a small nightly charge). Catalonia and the Balearics do both charge though, and for a family on a budget that's real money added to the overall price.
